What makes a good durian cake?

A good durian cake starts with good quality durian. The process must preserve the fruit’s recognizable aroma, flavor and character. The cake, cream and other ingredients should support the original flavor and texture of the durian rather than disguise it. These are the seven qualities we recommend checking:

  1. Recognisable durian character: You should be able to smell and taste the natural flavor of the King Of Fruit.

  2. Mao Shan Wang, D24 and other varieties have different levels of sweetness, bitterness and intensity. The seller should state what is used.

  3. Good fruit-to-cake balance: The durian should remain the main flavour, while the sponge, cream or cheese provides structure and contrast.

  4. Controlled sweetness: Durian possess natural sweetness and excess sugar can flatten the taste.

  5. The right serving texture: A chilled durian cake should be creamy and velvety and not watery or grainy.
